Cauliflower & spinach bake


Cook about 800g-1kg cauliflower florets for about 8 minutes in slightly salted boiling water. Saute 500g frozen thawed spinach in a tablespoon of butter and a squeezed garlic clove for a few minutes. Then let it cool a bit and add 3 beaten eggs and 1/4 teaspoon salt and pepper. In a bowl mix 250g ricotta,3 eggs,1/2 cup cream ,1 teaspoon dijon mustard,salt and pepper and mix well. Grease a 13 x 9 in oven dish with butter and spread the cauliflower florets over the base ,sprinkle some grated cheddar cheese over it,then spread the spinach and sprinkle some grated cheddar cheese and lastly the ricotta mixture and a generous sprinkle of grated cheddar cheese .
