Cauliflower patties

Last week I made tuna patties and I had comments from friends who told me that they bake the patties and not fry them. I had a cauliflower in my fridge and was undecided what to do with it ,was thinking to do it au gratin or boil it and put it in a greased dish and pour beaten eggs ,milk and grated cheese over it. Then I decided to make patties and baking them. I made these using a basic recipe ,but next time will add chopped parsley and finely chopped onion.The advantage of baking was that I used just a little oil,less mess and instead of cooking them in batches I baked them all together.


  1. 1 cauliflower boiled or steamed until tender then left to drain in a colander.
  2. 3 garlic cloves crushed
  3. 1teaspoon turmeric gives it a nice colour
  4. 2 eggs
  5. 2 to 3 tablespoons flour
  6. 1 teaspoon baking powder.
  7. salt & pepper


Preheat oven to 200C .

Prepare a baking sheet or dish and line it with baking paper ,lightly grease the paper with some oil.

Mash the cauliflower in a bowl as fine as you want it to be,add the garlic,turmeric,and seasoning ,the beaten eggs ,baking powder and flour.

To make even sized patties I used the 1/4 cup measure or you can use an icecream scoop.

Put them on the baking dish and flatten slightly.

Bake and check to see after about 10 minutes if the under side is golden brown and firm ,if it is turn over brush with a little oil and bake until they are golden.

I was pleased because they still came crisp on the outside .

Serve with salad or as a side dish.
