Carrot Cake

This is a simple & easy carrot cake recipe . The result is a moist yummy cake .

Ingredients :

• 250g self raising flour

• 400g caster sugar

• 2 teaspoons ground cinnamon

• 350ml vegetable oil

• 4 eggs

• 350g grated carrots

• 120g chopped walnuts

Method :

Sift the self raising flour and cinnamon in a bowl.

Mix the sugar in,then the eggs and oil until it is a smooth batter.

Stir in the grated carrots & walnuts.

Pour batter in greased and floured cake tin or oven dish.

Bake in preheated oven 150C  Gas mark 4 for about 25 minutes depending on your oven.

When cool you can cover with cream icing or dredge with icing sugar.
