Bragoli – Beef rolls or olives in stew
Finely chopped garlic,parsley,onion,turkey ham,and cheese mixed with herbs & seasoning and a beaten egg. Then putting some of this stuffing on each slice of thin sliced beef steak and rolled and secured with tooth picks.
Then the filled beef rolls are fried to seal in the juices. I deglaze the pan pouring some stock ,you can also use some wine. This will then be added to he stew.
For the stew heat oil in a saucepan,fry sliced onions,add curry and mixed spice and 2-3 bay leaves ,add chopped carrots and fry a bit then add 2 tablespoonfuls tomato paste and a tin of chopped tomatoes,add beef stock and some wine if using. Do not forget to add the stock or wine used to de glaze the frying pan. Add some peeled chopped potatoes,season and then add the fried beef rolls and when it boils put it on low flame,add 1 large tin peas and let it simmer until sauce thickens and meat is tender.DSCF1187 DSCF1180 DSCF1181 DSCF1182 DSCF1184 DSCF1186
