Boiled lemon cake

Ingredients:

  1. 2 lemons
  2. 3/4 cup oil
  3. 1 1/4 sifted cup self raising flour
  4. 1/2 cup coconuts
  5. 1 cup sugar
  6. 3 eggs

Method:

  • Wash and boil lemons for about 2 hours
  • Let them cool a bit and cut ,discard the pips and blend in a food processor.
  • Add the  other ingredients and blend until you have a smooth batter.
  • Put in a greased and floured tin and bake in preheated 170C oven ,check to see if its done with a skewer or tooth pick.
  • This can be made gluten free adding 250g ground almonds,250g sugar,1 teaspoon baking powder and 6 eggs to the lemons.
  • If you do not like coconuts just add their weight in self raising flour.
