Banana,almond and oats cake .


This is not just an easy and fast cake to make but it is also healthy ,no oils or fats,just 1 egg and a small amount of sugar. It can be made with gluten free oats so ideal for those on a gluten free diet and the milk can be substituted for a lactose free alternative or apple juice.Even the raisins one can use whatever they fancy ,dried strawberries,berries,cranberries etc. It resembles a ‘pudina’ in texture . And one can have it for breakfast ,teatime or as a snack with out having guilty feelings 🙂

Ingredients:

1 1/2 cups oats (if making  it gluten free make sure they are gluten free oats )

1/4 cup sugar (if you want it sweeter add up to 1/2 cup)

1/2 cup ground almonds

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 cup sultanas

1 teaspoon cinnamon

1 cup mashed bananas

5 tablespoons milk (if lactose intolerant substitute to suit your needs)

1 large egg

1 teaspoon vanilla.

Method:

Preheat oven to 180 C, grease and if you wish line with baking paper a 23 c x 23 c cake tin.

In a bowl put the dry ingredients the oats,baking powder,baking soda,almonds,raisins and cinnamon.

In another bowl mix the bananas,vanilla,egg and milk.

Pour the liquid mixture over the dry ingredients and mix well until it is a smooth batter.

Put the batter in the cake tin or dish and bake for about 25 minutes depends on your oven. Check with a skewer to see if its done.

When its still warm from the oven you can sprinkle over it a mixture of sugar ,cinnamon and crushed roasted almonds.

When it cools cut into pieces.
