Baked veggie spring rolls


To make these veggie spring rolls I used a packet of frozen spring roll pastry squares . There were 20 sheets of square pastry.Let it thaw before using in the fridge and while using it is very thin so taker care and cover the remaining pastry while using it with a damp cloth so it does not dry out.
If you want to make small bite size spring rolls cut the square in 4 squares . I used the whole square making large spring rolls.
To make the filling: Shred or finely chop 1/2 a cabbage, 2 carrots, 1 large onion and garlic. Heat a non stick frying pan and put a tablespoon of butter ,when it melts saute the veg .Season with salt and pepper 1 teaspoon turmeric, 1teaspoon garam masala (more or less according to taste) some chili if you like it spicy.add 1/2 cup frozen peas and let the mixture cook . The cabbage will seem a lot but during cooking it will wilt.
While this is cooking peel 2 large potatoes and dice into small pieces and fry . Season and add 1/4 cup water and cook until the water is absorbed and the potatoes are cooked.
When the veg are cooked put in a bowl and let them cool completely before making the spring rolls.
Prepare a baking tray lined with baking paper and grease the paper with butter. Separate an egg in 2 small bowls . Beat the egg white lightly (this is used to brush on the pastry to seal it and the egg yolk add a tablespoon of water and stir and this will be used as an egg wash to brush on the spring rolls before baking
Put a piece of pastry on the working surface with the point facing you (diamond shaped) and put some filling at the corner . Roll away from you then when you almost reach the other corner tuck in the sides brushing with more egg white and seal.Put the sealed bit side down on the baking tray.Repeat until you use up all the filling. Preheat oven to 175 C . Brush the springrolls with egg wash sprinkle some sesame or nigella seeds and bake until lightly golden .
These can be made and reheated when needed. I have made these using other fillings. Cooked lentils or chickpeas are very good added to shredded veg and also minced meat or chopped sausage .1622016_553502044756741_811467883_n 1981781_553502081423404_1344414004_n 10006433_553502021423410_795723755_n
