Baked Penne

Pasta is a family favorite . This is one recipe from many that I will share with you .

  • 1kg penne rigate
  • 1 large chopped onion
  • 2 garlic cloves chopped
  • 1 small or 1/2 an eggplant chopped
  • 250g chopped mushrooms or 1 tin sliced mushrooms
  • 2 large tins corned beef
  • 1 small tin tomato paste
  • 2 tins passata or 1 bottle
  • 4 eggs
  • 1 cup milk
  • 1 small pkt cooking cream(panna)
  • seasoning
  • 2 ltrs chicken stock
  • 1/2 cup grated cheese

In a large pot fry the onion and when its transparent add the eggplant and fry  ,then stir in the mushrooms and garlic, fry for a bit.

Add the tomato paste and let it cook a bit as you stir .

Then the passata .

Add in the chopped corned beef .

Season to taste .

Pour in the chicken stock ,mix well and let it get to a boil then simmer for about 30 minutes.

Put the penne in the simmering sauce ,mix well and cook until its al dente.

Grease a large baking dish and spread half the penne

In a bowl or jug mix the panna,eggs & milk

pour half of it over the bottom layer of penne and sprinkle half the grated cheese over .

Spread the remaining penne and pour the panna ,eggs & milk ,the grated cheese and a generous pinch of pepper and salt .

Cook in a 180C oven until the top is nice and crunchy.
