Baked Aubergine Slices with ricotta topping .

Baked Aubergine slices.
Put aubergine (eggplant) slices on a baking tray that is lined with baking paper and greased with olive oil and sprinkled with salt. Brush the aubergine slices with olive oil and put a mixture of finely chopped fresh tomatoes and oregano or basil . Then top with some ricotta mixed with an egg yolk,seasoning and a cup of grated cheese. Divide mixture over the aubergine slices and bake in a preheated 200 C oven until done,about 15-20minutes.DSCF9321
