Aubergine & beef Imbakbaka (inspired by a Libyan recipe)


In a large pot heat some oil and add a large diced onion,when it softens put in a medium sized aubergine cut into chunks. Add 2 teaspoons Al Amier Baharat spice mix and 1/2 teaspoon Al Amier Zhoug spice mix both these spices are found from Dical House ,Mosta and leading supermarkets .If you do not have these spices add chili flakes, ,paprika,coriander,black pepper and cumin and some mixed spice .Add the minced beef and cook until it browns . Add 4 large finely chopped garlic cloves. !/2 cup of tomato paste . Mix and let it cook for a few minutes stirring. Add 1 can of whole peeled tomatoes in sauce and break into chunks as you stir and a can of crushed tomatoes . Add 1 .5 ltr of chicken stock ,season with salt to taste and let it simmer
Add 500 g of pasta to the stew and let it cook it will absorbs most of the stew as it cooks. When the pasta is ready it is ready to be served.DSCF3497
