Apple Pudding (pudina tat-tuffieh)


I have been making this apple pudding since 1994. It is written in my recipe notebook and was given to me by my best friend Louise. This is a 100 plus times tried and tested recipe. It was a must when we had friends get together or Tupperware coffee mornings. It is also a family favorite and we like it warm with custard . Goes down a treat on cold winter days but it is equally delicious cold from the fridge. It is very easy to do ,just putting ingredients in no particular order and when all ingredients are put in mixed well.

Preheat oven 170C and grease oven dish 13in x 9in

  • 4 large apples peeled and chopped
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 cup sugar
  • 3 spoonfuls cocoa or drinking chocolate
  • 1/2 cup oil
  • 1 cup yogurt
  • juice & zest of half a lemon
  • 2 beaten eggs
  • 1/2 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves (optional)
  • 1/4 tsp ground cardamom (optional)
  • 1 spoonful jam
  • 11/2 cups sultanas (you can use up to 300g dried fruit of your choice ,sultanas & cherries for example ,or dates or figs etc )

 

Just put all the ingredients in a large bowl and mix well together.

Spread mixture in prepared oven dish and bake in oven for about 25-30 minutes,check with a skewer.
