Apple Layer Cake

In a bowl mix 3 apples cut into chunks ,1 teaspoon cinnamon,1/2 teaspoon ground anise seeds and 3 tablespoons sugar,1/4 cup sultanas or currants and 1/4 cup chopped walnuts.
In a bowl sift 13/4 cups self raising flour
In another bowl whisk together 1/2 cup veg oil,3/4 cup sugar ,1/4 cup orange juice,1/4 cup yogurt and 11/2 teaspoons vanilla.Whisk in 2 eggs one at a time.
Add the oil,egg etc mixture to the sifted flour until you have a smooth batter.
Grease and line a cake or bundt tin then put half the cake mixture on the base and add half the apple mixture ,pressing the apples lightly in the cake batter. Put the remaining cake batter over the apple layer and put the rest of the apples on top pressing them lightly into the cake batter.
