Aljotta – fish soup


While in Gozo we bought some lampuki and I decided to make some aljotta with the lampuki heads. Chop onion,peeled tomato,garlic and fresh chili pepper and fry . add 1/2 a teaspoon turmeric . Add 2 tablespoonfuls of tomato paste ,chopped olives,mint ,thyme and parsley add hot water and quartered potatoes.Season with salt & pepper and then put a colander on top of the pot and put the fish heads ,cover with a lid and let the soup simmer. When its ready add some rice and let it simmer for 10 minutes more and turn off heat . Before serving take as much fish meat from the cooked heads and put in the soup.DSCF0995 DSCF0933 DSCF0934
