Skewered Mushrooms stuffed with Herby Cream Cheese

I love mushrooms, in any way they come, sautéed in garlic, in sauces, in casseroles, in pasta dishes and risotto … and they are also delicious, stuffed!  I have a few recipes for stuffed mushrooms which I will share with you.  I will start with this easy and straightforward one.  Takes only minutes to prepare! And the presentation looks great too!

Skewered Mushrooms Stuffed with Herby Cream Cheese

Makes about 6 skewers with 3 mushrooms each

Ingredients

18 button mushrooms
150g cream cheese
½ cup grated Parmesan cheese
½ cup of chopped fresh herbs.  I used parsley, sage, marjoram, chives, thyme and rosemary)
1 small clove garlic crushed
Salt & Pepper
Dash Chilli Flakes
6 bamboo skewers, pre-soaked

Method

Remove the stalks of the mushrooms by wriggling it a bit till it comes off.  Discard or use in another recipe.  Place mushrooms face up.

Combine the remaining ingredients well.  With a teaspoon, fill the cavity of the mushrooms.  Do not over fill.  Also, do not worry if you have extra filling, it is lovely on crackers too!

Skewer three mushrooms on each bamboo stick.  Refrigerate for at least half an hour.

When ready to cook, heat a grill pan and then add some oil to it.  Put the skewers in the pan and cook until mushrooms look done and stuffing is soft and oozy.  Very carefully transfer to a serving dish.
