Gluten Free Pulpetti tal-Irkotta u Qarabali (Ricotta & Zucchini Patties)

This is a good way to maybe entice kids to eat some vegetables!  They are simple and also quick to make.  Lovely to snack on, or can be great too if served with a simple salad as a light meal.

Here is what you need … makes approximately 12

2 Zucchini, grated
3 Garlic Cloves, crushed
2 Spring onions, finely sliced
3/4 cup Ricotta (mashed with a fork)
1/4 Ricotta Salata, grated (if unavailable use Parmesan)
2 Eggs, beaten
Zest of a Lemon
1/2 to 3/4 cup of Gluten Free All purpose Flour
1/4 cup freshly chopped Parsley
Chilli flakes (optional)
Salt & Pepper

Combine all the above ingredients in a bowl.  In a large frying pan, heat some oil and drop heaped tablespoons of the mixture and form into patties using a fork.  Flip to the other side when browned and crisp.   Drain the patties on a paper towel lined plate.

Serve with lemon wedges and a light salad or with a ranch dressing if to snack on.

N.B.  For all those who are not only Celiac or Gluten Sensitive, but Lactose intolerant too, you can substitute the ricotta with mashed potatoes. Slightly different version, but am sure it tastes just as great!
