Gluten Free Apple, Speck & Cheddar Bread

As you gathered from past posts, I am still looking for the ‘Perfect Gluten Free Bread Recipe’.  Gluten Free Sweets and many other Savories come very close to the normal Gluten food we were used to … but bread … hmmm …not yet.

I came across this lovely recipe for flavored bread.  I gave it a try and thought of sharing with you too.  The flavorful ingredients in this bread masks that Gluten Free acrid taste.  Besides it has NO yeast so even those who are intolerant to yeast can enjoy ‘bread’ again.

It is nice fresh with some spread cheese on top but it is also equally delicious grilled or toasted like crostini and then covered with some tasty topping, like chopped tomatoes and melted cheese, or sliced into fingers, toasted and served with dips.

Well, this is how it is made if you want to give it a try!

You need …

1 3/4 cups Gluten Free All Purpose Flour
1/2 tsp Xantham Gum
1 tsp baking soda
1/2 Gluten Free baking powder
1/2 tsp salt
1 tbsp chopped fresh sage
3 large eggs
1/3 cup milk
1/3 cup olive oil
3/4 cup grated cheddar cheese
1/4 cup grated Parmesan
1 cup chopped apple (with skin)
6 slices speck (bacon, very thinly sliced), grilled and then crumbled

Start by preheating the oven to 110 degrees C.

Combine the GF flour, baking soda, baking powder, salt, xantham gum and sage in a bowl.

In another bowl, mix the eggs with the milk and olive oil and whisk.

Now combine the dry ingredients with the wet ingredients and mix well.  Add the chopped apples and the cheeses.  Lastly add the crumbled speck.  Mix well.

Put in a pan filled with hot water at the bottom of the oven.  This will help to make a crunchier crust.

Then just like a cake, pour the batter into a loaf pan and bake in the oven until a skewer when inserted in the center comes out clean.

Leave to cool completely before taking out from the pan.

Mmmm, lovely toasted, with tomato slices and melted mozzarella … and chilli!
