Choco, Peanut & Coconut GF Cookies

Hmmm…. have a backlog of recipes to put up but since I just finished baking these yumster cookies and many would like this easy recipe… I decided to start with it !

There is no flour nor eggs in these cookies.  They are nice and chewy and yet kinda crunchy too! It depends on how long you bake them. They are also not too sweet so if you prefer them sweeter, increase the amount of sugar.

Ingredients
1/2 cup sugar
1/3 cup cocoa (I used amaro)
3 tbsp butter
1/2 milk
Shake cinnamon
1 cup dessicated coconut
1 cup crushed roasted peanuts
1/2 cup chocolate chips

Method

Put the sugar, cocoa, butter, milk and cinnamon in a pot over another with boiling water (Bain Marie).  Stir over a low heat until all the sugar is dissolved.  Remove from the heat and leave to cool down a bit.

Add the peanuts and coconuts and if cool enough the choc chips. Now this will be messy but worth it! Take the mixture and shape into a roll and put over a large piece of cling film. Roll it up tightly and put in the fridge for at least three hours.  I left them overnight.

When ready to bake, preheat oven to approx 170 deg C.  Take the roll out of the fridge, cut into slices, the thickness you prefer. I myself prefer them thin, so after cutting them into 1/2 inch slices and laying them on a lined baking tray, I pressed them with the bottom of a small bowl.  Bake for approximately 20 minutes.  You can either put granulated sugar on top, or dust some icing sugar or drizzle with white chocolate …. or eat them as they are !
