Chicken Skewers with Egg Fried Rice

Chicken recipes are always so popular.  Why wouldn’t they be? Chicken is not expensive and cooks very quickly but most of all it is very versatile!

These Chicken Skewers are so easy and quick to prepare.  The marinade although very simple, gives the chicken a bit of an Asian feel to it and this is further complemented by serving it with home made Egg Fried Rice.

Here is what you will need, approximately for two

1 large chicken breast
2 tbsp soy sauce
1/2 tbsp lime juice
1/2 tbsp Sake
1 tsp minced ginger
Red chilli pepper flakes, as hot as you can take !
1/4 tsp sugar
1/2 Fish SauceVegetable or Peanut Oil
Bamboo Kebab Skewers (soaked in water)

Start by cutting the chicken into strips lengthwise and threading them onto the skewers.

Now prepare the marinade by combining the rest of the ingredients.  As I said in a previous post, I prefer marinating in plastic/freezer zip lock bags.  So put the marinade in a large plastic/freezer zip lock bag and carefully put in the chicken skewers.  Close the bag and leave to marinade, turning over the bag every so often.  Ideally these should marinade overnight or at least for half an hour.  I had mine marinating for half an hour and boy oh boy they still came tasty!

You can either BBQ them or like I did, just placed them in a hot oven, turning and basting with the remaining marinade.

Whilst they are cooking you can prepare the Egg Stir Fried Rice.  A similar recipe for fried rice is already uploaded on my blog here.  In this recipe, you use 2 or 3 eggs and peas and shallots as the ingredients.

Stir Fry as per the recipe.
