  • 4 eggs.
    2 cups castor sugar.
    4 cups sr flour.
    1 full cap almond essence.
    1 tbs apricot jam.
    Method.
    Beat the eggs then add the sugar. I use my kenwood & use the whisk.Then add the apricot jam & almond essence. When this is done i take the whisk off & put the k beater. Put the flourin & mix 4 only a little while.
    Form into balls & bake in on medium for about 8 to 10 minutes or until brown. I cook mine 1 tray at a time'
    When cool ice.
    Icing recipe.
    1 egg white.
    Lemon juice.
    Icing sugar.
    Colouring.
    Whisk the egg white then add the lemon juice, icing sugar & colouring. I do circle patterns on mine.
    Enjoy. They freeze very well.
