  • Ingredients:

    2 packets morning coffee biscuits (500gr)
    1 can condensed milk (sweetened)
    7oz ground almonds
    7oz hazelnuts
    7oz walnuts
    (you can include other nuts as well just keep the combined weight the same)
    2 tablespoons of candied peel
    Glace cherries cut in halves
    1 shot whiskey
    1 shot cherry brandy
    1 large bar of dark chocolate

    First toast the hazelnuts in the oven (gives a nice flavour) and cool

    Then crack all the nuts into bits (you can do it in a foodprocessor…but be careful not to overdo it as you need pieces of nut) I put the nuts in a plastic bag and bash them with the rolling pin. It looks nice when you cut the log to see all the pieces of different nuts and the cherries.

    Make all the biscuits into crumb by whizzing in the food processor

    Put the biscuit crumbs in a large bowl and add the cracked up nuts, ground almonds, cherries and candied peel and mix together then add half of the can of condensed milk and mash the mixture together with your hands. Then pour in the rest of the condensed milk and the alcohol and keep on mashing with the hands until it is well combined and sticks together.

    Then divide the mixture into two roughly equal amounts. Then spread the mixture evenly onto two squares of baking parchment, roll them up and put in the fridge overnight to allow the mixture to set.

    The next day melt the dark chocolate in a bowl over a pan of boiling water and spread the chocolate over the two logs. As the chocolate starts to set make lines in the chocolate with a fork to make it look like a real log and you can also put some silver balls to give the log some sparkle.

    Store the logs in the fridge until you want to eat them. They keep well for several weeks.
