  • For all those that emailed me last night regarding the pizza dough, here it is.
    2 sachets dried yeast
    1/2 tsp caster sugar
    125ml lukewarm water
    425g strong bread flour or plain flour
    1tsp salt
    3tblsp olive oil
    5-7 tbsp warmwater
    crumble the yeast into a small bowl and sprinkle with the sugar. add the water, then stir to dissolve the yeast & sugar. cover with a clean tea towel and prove in a warm spot for 30 minutes.

    sift the flour into large bowl. make a hollow in the centre and pour the yeast mixture, salt, olive oil and the luke warm water into it. knead everything into a smooth, silky dough, then shape it into a ball. dust the ball with a bit of flour, cover and set aside in a warm place to rise for an hour, or till it doubled in volume.
